Tasty Recipes With Carrots
I am grateful that my children have no problem eating raw or cooked vegetables. However, I realize how much happiness I have, because not all children are happy eating vegetables, they put them aside from a plate and just don't eat them. I have a few carrot recipes for you that your kids might find as tasty as much as my kids :)

5 Tips On Tasty Food With Carrots For Kids
Pasta With Carrots And Pine Nuts
400g of spaghetti or other pasta, salt and pepper, 50g of raisins, 300g of carrots, 2 tablespoons of butter, 2 spring onions, 50g of pine nuts, 1 teaspoon of sugar, olive oil as needed
Cook the pasta in salted water with a drop of oil. Soak the raisins in water. Cut the cleaned carrots into strips and fry in butter. Stir in chopped spring onions, pine nuts and drained raisins. Sweeten with a little sugar a little to taste. Mix with the carrots and finally with the cooked pasta. If the pasta is too dry, add a little oil.
Our tip: If you have leftover vegetables in the fridge, add them too. Fry leeks cut into circles with the carrots in butter, the same can be done with broccoli or any other vegetable.
Carrot Patties With Apples
1 teaspoon of flaxseed (or replace this by 1 small egg), 1 small sweet apple, 2 large carrots, 1 small courgette (zucchini), salt and pepper, 1 onion, 1-2 cloves of garlic, juice of 1/2 lemon, ground cinnamon to taste, fresh spices and ginger, 1 tablespoon plain flour, frying oil (I recommend olive oil), white yogurt for dip
Crush the flaxseed in a blender or smoothie maker and pour about 3 tablespoons of water. Peel an apple and remove the core. Scrape the carrots and grate both roughly. Also grate the courgette in a different bowl, add a pinch of salt to it and let stand for a while. Finely chop the onion and peel and fine chop the garlic cloves (or use a garlic press). Squeeze the liquid out of the courgette and mix everything in a bowl. Add the swollen flax (or a small raw egg), crushed garlic, lemon juice, salt, pepper and, depending on your taste and courage, experiment with ground spices. Sprinkle with a little flour and form little patties. Heat the oil in a pan and fry the patties on both sides. Serve with a white yogurt dip - just season it with salt and pepper or a clove of garlic.
Our tip: If you omit garlic, salt and pepper and just prepare an apple snack instead of yogurt, the patties will be a great snack after lunch.
Carrot With Feta Cheese
12 small carrots, salt and pepper, 1/2 lemon, olive oil, 200g of feta cheese, 1 tablespoon olive oil
Switch on the oven at 190°. Wash the carrots thoroughly and clean them with a vegetable brush. Cut them lengthwise and straighten them on a baking sheet lined with baking paper. Add salt and pepper, sprinkle with grated lemon zest and lightly drizzle with olive oil. Bake gently for about 30 minutes. Sprinkle the still hot carrots with crumbled feta cheese and drizzle with lemon juice and serve.
Carrot Coconuts With Walnuts
Ingredients for about 18 balls:
200g of dried coconut
1.5 teaspoons of ground cinnamon
1 tsp of ground ginger
1 larger pinch of grated nutmeg
1 large carrot
50 g of walnuts
75 g of light cane sugar
4 pcs of egg white
1 pinch of salt
Preheat the oven to 170°. Line the baking tray with baking paper. In a bowl, mix coconut, cinnamon, ginger and nutmeg. Peel a carrot and grate it and add it to the coconut mix. Chop the nuts into smaller pieces (or you can use a plastic bag and bash the nuts with a roller) and mix with the sugar, egg whites and a pinch of salt together with the carrots and coconut until the mixture is combined. With a teaspoon take out a spoon full of the dough mixture and shape some balls from them with the help of a second spoon (or roll them in your hand). Place them on the prepared baking tray with a space between the pieces and bake in a preheated oven for 15-20 minutes until the coconut turn golden and firm. Then remove them from the baking sheet and allow to cool.
Carrot Salad With Apples
400g of carrots
2 large apples
4 tablespoons lemon juice
Scrape the raw carrots and apples and grate on a fine grater. Mix everything together. You can sweeten the salad according to your and your child's taste. You can also add coconut, nuts or yoghurt. Anything you and your kids love.
